All those names together just make me happy. Scratch Chocolate Coconut Cake With Whipped Icing..it’s awesome right! We had plans of doing another staycation (read more about that on TDFtravels). However, those plans didn’t work out so we postponed them and decided to spend the weekend re-capturing our childhood favorite memories and sharing with our kids. The kitchen seems tohold the most memories for me. Cooking with my mom or parties congregating around the kitchen area..it all happened in, near or around the kitchen. I absolutely have my dream kitchen now since we moved into our forever home and cooking in there is heaven.
Another one of my absolute favorites is a sheet cake that I use to make for the church functions. Back then I started off with a box recipe and modified it but still, I loved being helpful and making cakes for the church. It was my first contribution that I made on my own and felt awesome about when growing up.
Do you remember when you would watch I Love Lucy and all the cakes they made seemed so …well…juicy. Not sure if that’s the right word to use but they just seemed like they had stature. Not like the box cakes you can find in the store today.
I remember the first time I made a scratch cake. I knew that I never wanted to make a box cake again (well, of course until I had twins and needed to bring something to school in a jiffy – then it’s ok).
When I saw this recipe on The Diary of Daves Wife (love her) this past weekend, I asked my grandma if she would share her chocolate cake recipe from THE cookbook she gets all her recipes from (it’s old – very old) which meant I needed to adapt it so I wouldn’t pass out from a heart attack with all the unhealthy ingredients. The book my grandmother uses is this one: All New Fannie Farmer Boston Cooking School Cookbook. There is a flourless pound cake recipe in this book that will make your toes twirl. It’s so delish! She’s made it forever and once you try it you will never by store bought again.
